<p class="content--summary-more" style="">ボルシチは根菜のビーツを使ったスープで、ウクライナ全土に古くから伝わっています。<br /><br />この伝統文化について、ユネスコの政府間委員会は7月1日「緊急に保護する必要がある無形文化遺産」に登録しました。<br /><br />ロシアによる軍事侵攻で存続が脅かされていることを理由としていて「ボルシチの調理や素材となる野菜の栽培ができなくなるだけでなく、集まってそれを楽しむコミュニティーが危険にさらされている」と指摘しています。<br /><br />この審議は当初、来年行われる予定でしたが、ロシアの軍事侵攻を受けて前倒しされました。<br /><br />ボルシチはロシアや旧ソビエト諸国でも食べられていて、ユネスコは今回の登録がウクライナ固有の料理と認めたものではないとしています。</p>
